Nouvia started with a simple question: why can't a protein bar actually nourish you? The answer became an obsession — and then a bar.


The answer started at home — with a pregnant wife, a growing family, and a deep dive into what real nourishment actually looks like. This served as the road map to creating the Nouvia Bar.

Where It Began

A nutrition book, a bad bar, and a question that started everything

In 2023, a nutrition book changed how I thought about food entirely. Choline from whole egg yolks. Glycine from bone broth. Vitamins A, D, E, and K from grass-fed fat. Real nutrients from real sources — not extracts, not isolates.

I looked at every protein bar in our cabinet. Most were just date paste with protein powder — engineered to hit a number on a label, not to actually nourish a body. Just a vessel for protein in bar form without a focus on whole food nourishment for the body.

I knew I could build something better. So I started trying.

The Build

Bad batches, a 16-cup food processor, and a $5,000 day

The first batch used whole grated cassava, maple syrup, honey, bone broth, and ghee. It was awful. It created a good laugh — and still felt like we were onto something.

After too many failed recipes to count, we finally had a bar that tasted good. A bar made from fruit, beef bone broth, egg, and ghee — and it actually worked.

Our first sale was at a farmers market in Dallas. No cash in the box. Payment wasn't connecting. People handed us cash and were just happy they found something real.

Then an influencer got a hold of the Nouvia bar. Our first $5,000 day hit — then $3,500 the next morning before we had to shut the store down. We were making 16 bars at a time in a rental apartment, one batch at a time. It took 2 weeks to fulfill nearly 3,000 bars. My wife was a saint taking care of our 6 month old baby and helping me pack bars.

The Hard Part

A $40,000 loss and the competition that saved everything

After relocating the family from Dallas to Phoenix, we tried a copacker to scale production. It nearly ended everything. Half the product went to waste — it wouldn't form. Nearly $40,000–$45,000 down, about half of that gone entirely.

We applied to pitch competitions to survive. One asked the fatal question: "Where do you make your bars?" We said Decatur, Illinois. It was an Arizona-focused competition. We didn't win.

Then a virtual pitch competition offered $10,000 in shared kitchen credits. We filmed a video at home — the failure, the lessons, the next steps. In December 2025, we got the email. We won.

We were back. Stronger product. Better flavors. Better sourcing. Better packaging. We took back production and now had a proper commercial kitchen to build from.

Nouvia: Nourishment and via vitae — nourishment is the way of life

Every ingredient earns its place. Pasture-raised whole eggs — yolk included — and grass-fed beef bone broth deliver complete protein from whole food sources, not isolates. Grass-fed ghee instead of seed oils. Whole organic apple for natural sweetness with zero grams added sugar. Four real ingredients. Nothing extracted. Nothing isolated. Nothing your body doesn't recognize.

What started as a home kitchen experiment became a bar for anyone who wants to fuel their body with something real. No compromises. No shortcuts. Just food that actually works.
